Kristen Stewart - LOQUAT TARTS
Preheat oven 350F (180C)
* 3 cups loquats (2 cans)
* 1/2 C. juice from can
* 1 C. sugar
* 1/2 tsp. allspice
* 1/4 tsp. cinnamon
* 1/4 tsp. ground cloves
* Juice from 1/2 lemon
* 1/4 C. flour
* 1/2 C. dry cranberries
Topping:
* 3 packages instant oatmeal (cinnamon apple flavor)
* 1/2 C. flour
* 1/2 C. brown sugar
* 1/2 C. melted butter
**DIRECTIONS**
Cut loquats in halves or thirds and put in medium saucepan with loquat juice, sugar, allspice, cinnamon, cloves, lemon juice and cranberries. Bring to simmer and simmer 15 minutes. Slowly whisk in flour. Simmer 5 minutes.
Butter inside of ramekins or small casserole (pie dish). Add fruit mixture to ramekins (about 3/4 full).
Mix oatmeal, brown sugar and flour in a medium bowl. Add melted butter and mix until oatmeal mixture is buttery and lumpy.
Top ramekins or pie dish with oatmeal mixture and bake 30 minutes.
Serve with ice cream.
